Tony Spittlehouse - our head Chef and Father of the family. Tony has 30 years plus experience in hotel/ restaurant kitchens. After working for the last 20 years in a local hotel he jumped at the chance of owning his own business in a place he knows well. Tony focuses on creating excellent quality dishes to suit every palate. Whether you require traditional ‘pub grub’ or something extra special all dishes are created with every care and attention.

Adam Shaw - our Chef/Cellar man and soon to be Son in Law. Adam has always worked in the hospitality industry. After graduating from Scarborough College as a fully qualified chef he has since spent time managing a local Tea Room, as Assistant Manager in a local hotel and, more recently, co-managing a large hotel near Bristol. Adam can turn his hand to just about anything in our business and is always interested in your views and ideas.

Kim Spittlehouse - our Restaurant/Barmaid and daughter of the family. Kim has spent most of her life behind local bars (the right kind!) or serving in restaurants. After a stint at Cheltenham and Gloucester College of Higher Education she spent time as a duty manager in a busy market town hotel learning every aspect of the business. More recently she co-managed a large hotel near Bristol with Adam.

Emma Spittlehouse - our Assistant Manager and baby of the family. Emma has worked behind the bar of more than a few of the pubs in the nearby town of Pickering and is known to many people. Fairly new to the trade she has picked it up very quickly and could have been born in a pub!

Jane Spittlehouse and Jenny Shaw - our behind the scenes ‘back-up’ and the Mums of the Team.

Jane is born and bred to the area and knows all there is to know about Thornton le Dale and The New Inn. Her career began many years ago when she and Tony ran a pub near Northallerton, although she has also worked behind many of the local bars. Not yet behind our bar but I’m sure it won’t be long! Jane is also essential to the smooth running of our letting rooms and kitchen.

Jenny is also a local to the area and has been drafted into our team as she is Adam‘s Mum!. With an excellent housekeeping career behind her we know that our rooms are in safe hands. Jenny is also being steered into our Restaurant and Kitchen and is proving to be a natural.
